Aussie Bites

Ingredients

flax seed
½ cups
oat flour

canola oil
½ cups
honey
¼ cups
vanilla extract

baking soda
1 tsp

Instructions

  1. Preheat oven to 325°F. Bake 10-12min until top is brown. Let cool in pan for 5-6min, then cover with towel, and flip over remove bites. Cool completely on wire rack.
  2. Spread single layer of flax seeds on cookie sheet, toast for 6-8min until brown. Shake seeds around periodically for even toasting. Cool seeds quickly to room temperature in the refrigerator.
  3. In a large bowl, whisk together the oat flour, salt, brown sugar, shredded coconut, rolled oats, raisins, apricots, sunflower kernels, flax seed, cinnamon, and nutmeg.
  4. In a small saucepan, over medium/low heat, melt butter, canola oil, honey, and vanilla extract, and mix thoroughly.
  5. In a small bowl, mix baking soda with 2 tbsp of hot water until soda is dissolved. Stir solution into fat mixture.
  6. Make well in dry ingredients, and pour in fat mixture. Stir well, until entirely incorporated.
  7. Using greased or non-stick mini-muffin pan, spoon mixture into cups, and press firmly and evenly, until level with the top. Flatten top with spoon.

2 cups oats 2 cups whole wheat flour 2/3 cup brown sugar 1 (3 1/2 ounce) can unsweetened coconut 1/2 cup sunflower seeds 1 cup dried fruit (raisins, dates, figs, cranberries, etc) 1/4 cup honey 1 cup unsalted butter 1 teaspoon baking soda 2 tablespoons hot water Directions:

1 Preheat oven to 350 degrees (farenheit). 2 Combine first six ingredients in a large bowl. 3 Melt honey & butter together in microwave; set aside. 4 Mix baking soda with hot water and add to butter mixture. 5 Pour butter mixture into dry ingredients and mix well. 6 Place tablespoons of mixture into non-stick mini-muffin cups (no need to grease) and flatten mixture slightly. Bake 10 minutes or until golden. Cool on wire racks.
