- tomatoes, petite-diced
- 1 can -or- 1 large tomato
- raisins
- (optional) 1 cup
- main ingredient (meat or tofu)
- 1 lb

Instructions
- Heat oil in a sauce pan until hot, using medium to medium/high heat.
- Add cumin seeds and fry until they bubble and turn brown (<1min).
- Add onion, and pepper and cook until onions are browning. Add carrots and peas half-way through cooking.
- Add garlic, ginger, and chiles and cook until garlic is light brown.
- Add lemon juice, cumin powder, coriander powder, cinnamon, white pepper, cayenne pepper, and turmeric. Stir well and cook for another 2min.
- Add tomatoes and optional raisins and cook for another 5min.
- Add your main ingredient. Cook until ingredient is cooked through.
- Reduce heat to medium-low and cover. Simmer for 1-2 hours, stirring occasionally. Add salt and pepper to taste after at least 30min has passed.
Notes
sauce. Many meats are good as the main ingredient, including ground turkey, sliced chicken breast, lightly stir-fried tofu, or shredded lamb. I like chicken breast sliced into 1½” long by 1/3” wide cuts.
