Ingredients
- pizza dough
- 2 lb (store bought dough is fine)
- onion, chopped
- 2 medium
- garlic, minced
- ½ heads
- olive oil (not virgin)

- tomato puree
- 2 cans
- water
- 2 cups
- italian sausage
- ½ lb
- sugar
- taste
- salt
- taste
- pepper
- taste
- garlic powder
- taste
- mozzarella cheese, shredded
- 3 cups
- parmesan cheese, fresh grated
- 4 tbsp
- toppings, thinly sliced
- taste (e.g. 1 pepper is enough for two pizzas)
Instructions
- Over medium/high heat, brown onions and garlic, with a generous coating of olive oil.
- In a kettle, add cans of tomato puree, rinse each can with water. Put kettle over medium/high heat. Add sugar. Add browned onions and garlic to kettle. Add around 1 tsp of salt and pepper. Add 3 tbsp olive oil to kettle.
- Cut sausage out of casings and lightly brown in skillet over medium heat. Add sausage to kettle.
- Reduce temperature to medium/low to simmer the sauce. Simmer and meld for an hour. Season to taste after simmering.
- Grease and flour two pizza pans. Flatten pizza dough to fill pans. Put damp dish towels over doughs to let it rise (put someplace warm). It is done rising when it looks about right. Use your judgement.
- In a medium bowl, mix mozzarella cheese and parmesan cheese.
- Leave 1/2” edge uncovered of ingredients: Spread 1 cup of sauce on each pizza. Add thinly sliced toppings of choice. Evenly spread cheese mixture on each pizza. Don’t overload the pizzas, or they won’t bake through properly.
- Preheat 375°F, put racks in the upper and lower third positions. Bake 30min.
