Mandy's Oven Pancakes

Ingredients

flour

2/3 cups

salt

½ tsp

sugar

2 tbsp

eggs

2

whole milk

1 cups

cinnamon

1 tsp

nutmeg

½ tsp

butter

¼ cups (½ stick)

Instructions

1. Preheat 400°F, put rack in the middle postion. Use 9” glass pie plate. Bake for 25-30min, should have a custard center when done.
2. In a large bowl, sift flour, salt, and sugar together. Whisk together to thoroughly mix ingredients. Add eggs, one at a time. Add cinnamon and nutmeg. Blend until well combined.
3. Melt butter in pie plate (5min in oven). Pour in mixture (don’t stir in butter) and bake.
4. Serve with syrup, powdered sugar, lemon curd or jam.
