- dates, chopped
- 2 cups
- walnuts, crushed
- 2 cups
Instructions
- Preheat 300°F, put racks in the upper and lower third positions. Use two large cookie sheets. Spread oat mixture evenly on the cookie sheets. Bake for 40min, stirring granola every 10min. Rotate pans after each stirring. Cool completely on cookie sheets. Store granola in air tight container.
- In a large pot, over medium to medium/low heat, mix peanut butter, honey, brown sugar, canola oil, cinnamon, ginger, and vanilla extract. Stir until smooth consistency.
- Add oat flakes, rye flakes, coconut flakes, wheat germ, sunflower seeds, sesame seeds, flax seeds, raisins, dates, and walnuts. Stir until mixed thoroughly.
Notes
finished granola. Top cookie sheet will cook faster than the bottom, so rotate the pans to avoid burning the granola.
